Fran: Pumpkin Chip Muffins

First you need to know that this recipe was given to me by Jennifer. Second you need to know that it's very good! :)



Pumkin Chip Muffins

4 eggs
1 (16 oz.) can pumpkin (not pumpkin pie filling)
1 tsp. cinnamon
3 cups flour
2 cups sugar
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 1/2 cups oil
2 cups chocolate chips

1. Preheat the oven to 400 degrees.
2. Mix eggs, pumpkin, oil and sugar together until smooth.
3. In another bowl combine the dry ingredients.
4. Mix the wet ingredients into the dry just until moistened; stir in chocolate chips.
5. Fill greased or paper lined muffin cups 2/3 full and bake for 15 to 20 minutes.

This recipe makes about 2 1/2 dozen muffins.

I usually reduce the oil to 3/4 cup and they still taste good (but have about 52 calories less per muffin!) The recipe doesn't specify what type of chocolate chip but I have used milk chocolate, semi-sweet and bittersweet. Bittersweet is my hands down favorite as it lends a good chocolate taste but not a lot of sweetness. And the bonus is it's good for you! :) (BTW, you can buy all three types of chocolate in the bulk section at WinCo. very reasonably. They have a very good bittersweet chocolate. ) I have also used maple chips and they make a mean muffin! Next I'm going to try cinnamon chips; I think that will be quite good too. (I get my maple chips online at The Prepared Pantry.)

It sounds so yummy, I might even try to bake! I can just imagine the smell wafting through the house!
